'Anemic Eats': 6 Meat Spaghetti Bolognaise

...well i have had some queries about my method - and disbelief that i actually make it - for 6-meat-spag-bol and thought i would share the meat-tastic crazy with the world:

INGREDIENTS:

  • Extra Virgin Olive Oil - not in picture.
  • 2 x brown onions.
  • 4 x cloves garlic.
  • 2 x carrots.
  • 2 x sticks of celery.
  • 4 x rashes of bacon.
  • 1.25KG x mince: kangaroo, pork, veal, lamb, beef + turkey.
  • 2 x cups red wine.
  • 2 x tins of diced tomato (use different brands for extra taste).
  • 2 x small tins of tomato paste (use different brands again).
  • 1 x handful of thyme.
  • 1 x handful of sea-salt.
  • 2 x handfuls of brown sugar.
  • parmesan as desired.
  • pasta as desired.

PREPARATION:

  • Dice up - very finely - the carrot + celery + onion + garlic; add this to a bowl.
  • Dice up - very finely - the bacon; add this to a bowl.
  • Dice up - very finely - the fresh tomato; add this to a bowl.
  • Unpack all the mince-meat + combine; add this to a bowl.
  • Grate some parmesan; add this to a bowl.
  • Open + uncan the tinned tomato + tomato paste; add this to the bowl of the diced tomato.

METHOD:

  1. Heat some olive oil in pan.
  2. Add bacon + cook bacon lightly.
  3. Add bowl of diced carrot, celery, onion + garlic.
  4. Add a handful of sea-salt.
  5. Cook this mix together until 'caramelised'. (Basically until onion looks clear)
  6. Add the mince + cook until the meat is 'coloured'. (Basically until a uniform, light-brown colour)
  7. Add the 2 x cups of red-wine + bring to a boil.
  8. Add 2 x small handfuls of brown sugar + stir
  9. Add the bowl of tomato stuff + simmer until bolognaise mix has lost most of it's water. (Can do this to personal taste obviously. Personally i like a dry bolognaise; but that's just me. This stage can take about 1hour)
  10. Add thyme to bolognaise mix + stir.
  11. Add bolognaise to choice of pasta.
  12. Add parmesan + salt + pepper to taste.
  13. BAM!

get eating people! :)

...oh, and if anyone knows were to source any extra mince-meats (i'm thinking rabbit + duck mainly) please let me know! Oh; and thanks to Satan for giving me the info that you can get kangaroo mince from Coles @ The Edgecliff centre.
